Drain all the water from soaked rice and keep it aside. Add biryani masala, red chili powder and salt in paneer and mix well. Rest it for about 10 minutes to marinate. Heat up ghee in a pressure cooker and add cashew nuts. Fry well until cashew nuts get nice golden color and take them out in a dish. In the same ghee add cumin seeds and let it splutter. Add cinnamon stick, bay leaves, star anise, cloves, black peppercorns, black cardamom and mix well. Add onion and fry until onion gets nice golden color. Add ginger-garlic paste, biryani masala, coriander powder, red chili powder and green chilies and mix well. Add curd, salt and fry everything well together for about 3-4 minutes. Add coriander leaves, mint leaves and mix well. Add cauliflower florets, carrot, French beans, potato and fresh peas and mix well. Close the lid and steam the veggies for just 5 minutes. Add paneer and mix well. Spread the veggies evenly and add soaked rice. Spread it evenly and add water, salt, ghee. Close the lid and cook on high heat until 1 whistle. Turn off the gas and wait for few minutes until steam is released from the cooker. Open the lid and check.
