I started the afternoon not knowing what to cook, so I headed straight into the garden for inspiration. GREEN PESTO PASTA SAUCE RECIPE (That kids will love) I made this dinner up on the spot and didn't specifically measure what went in, so this is a rough guide. 5 hands-full of BASIL 3 hands-full of MINT 2 hands-full of PARSLEY Half a lemon's rind finely grated Half a lemon's juice 1/2 cup olive oil Cashews (or any other nut) to taste Salt (the amount I put in was way too much. Hack for fussy eaters - the more pureed it is, the harder it will be for them to identify individual ingredients and the more it'll just blend into becoming a mysteriously delicious "green sauce". 2) Then: Gently simmer on a fry pan just enough to soften the zucchini. Add about a cup of water (or however much until you get the texture you like) Cook any pasta you like, mix and enjoy. Healthy and delicious.
