This is an authentic Parsi recipe which is Mutton cooked with a lot of tomatoes and Indian spices. It tastes best with hot bread Ingredients 1 kg mutton on the bone 1 large cinnamon stick - 10 pepper corns 6 cloves - 6 to 7 green cardamons 1 kg tomatoes chopped - 4 medium onions chopped 3 teaspoons ginger garlic paste 3 green chillies finely chopped 1/2 teapoon turmeric powder 1 teaspoon cumin powder 3 tea spoons kashmiri chilli powder 1 and 1/2 tea spoons salt 1 tea spoon sugar 1 teaspoon garam masala powder 6 table spoons oil Method Place a pressure cooker on high heat and add 6 tablespoons oil Add to this 1 large cinnamon stick, 10 pepper corns, 6 cloves, 6 to 7 green cardamons Add 4 medium onions chopped and fry for 6 to 8 minutes until translucent Add 3 teaspoons ginger garlic paste, 3 green chillies finely chopped and fry for 3 to 4 minutes Add 1/2 teaspoon turmeric powder, 1 teaspoon cumin powder, 3 tea spoons kashmiri chilli powder, 1 and 1/2 tea spoons salt and fry for a minute Add 1 kg mutton on the bone and cook everything for 5 minutes Add 1 kg chopped tomatoes, 1 teaspoon sugar, 1 teaspoon garam masala powder and mix everything well Add 1 cup water and mix everything well Pressure cook for 4 to 5 whistles Open the cooker after it has cooled and stir the mutton gravy and bring it to a boil, simmer for 7 to 8 minutes and turn the heat off Let it sit for 15 minutes before serving
