Baursaks are Kazakh doughnuts. We can't have a single feast without them, as they're our "delicious tradition." They're especially delicious when still hot. My mom makes these baursaks using my azheka recipe. Recipe First, make the dough: pour water into a large bowl, add sugar and salt, and mix thoroughly. Add 200 grams of flour and yeast, mix well, and let rest for 30 minutes. Next, add the eggs, butter, and flour until you have a soft dough. It's important not to press the dough too hard while kneading, so the baursaks will be airy.Cover it again for 30 minutes. Roll out the dough to a thickness of 1-1.5 cm and cut into squares. Cover with plastic wrap while you make the rest of the dough. During this time, it will fully rise and you can begin frying. Pour oil into a small saucepan and fry on both sides until golden-orange. Enjoy!
