Strain, reweigh to top back up to 195g. Add vanilla, reboil, pour over chocolate, whisk smooth. Emulsify, cover with plastic wrap, set 4–5 hrs to piping consistency. 🍫Chocolate Chablon Discs 🛒 Ingredients Silikomart Round Chablon Mat 30mm - https://savourschool.com.au/product/r... 400g Callebaut 2815 Dark Couverture 57.7% (tempered) - for tempering guidance, watch • Tempering Chocolate in the Microwave with ... Optional: Transfer sheets for the finish (or leave off for plain discs) - https://savourschool.com.au/product-c... 👩🍳 Method Place transfer sheet (textured side up) on baking paper. Position chablon mat, spread tempered choc into discs, scrape excess. Once set to touch, remove mat. Leave to set 1 hr (or 5 mins fridge). Repeat with 2nd mat for plain discs (these are the bases). ✅ To Finish! Pipe ganache (7mm star nozzle) onto plain discs. Top with patterned discs (or leave plain).
