Hi, Bakers! I'm Crystal, The Cake Lady and today I am going to share my recipe for Peach Cobbler Pound Cake! Peaches are in season here in the south, and I can't think of a better way of using them than in this delicious dessert! Here is the recipe: Cobbler topping (goes in pan first) -1 Lg. Can of Peaches to layer in bottom of bundt pan (fresh or frozen can be substituted) -1/2 stick butter -1/2 cup brown sugar Melt together butter and brown sugar in a sauce pan. Spray Baker's Joy liberally in Bundt Pan. Arrange sliced peaches in bottom of the pan and pour the brown sugar mixture over them. Batter: -3 Sticks room temp. salted butter -3 C. granulated sugar -5 room temp eggs (large) -3 C. all purpose flour -1/2 Teaspoon Salt -1 Teaspoon Baking Powder -1/4 cup (half of a 3 oz. package) Peach Jello -5.3 oz. container of peach yogurt -1 Teaspoon Almond Extract -2 Teaspoons Vanilla Extract -2 cups diced peaches (Can use fresh, frozen or canned) Cream butter and sugar together. Add eggs, one at a time. Combine all dry ingredients in a bowl and add alternately with yogurt. Add flavoring extracts and diced peaches. Pour batter carefully over peaches/brown sugar that is in the bottom of the Bundt Pan. Bake at 325 for an hour and 15 minutes, or until a toothpick comes out clean, testing several places in the cake to verify. It can take much longer--up to an hour and 45 minutes sometimes. I usually wait 10-15 minutes to invert the pan onto a cooling rack, then another 10-15 minutes before lifting pan off. This helps the cobbler on top to set up a bit. If some peaches slide off, just put them back in place while it is still warm and allow to cool. Cool for a MINIMUM of 3 hours then make glaze if desired. Glaze: (optional) -1 C. Powdered sugar -1/2 teaspoon vanilla -1 Tbsp. Peach Juice reserved from canned peaches, or you can use milk or cream instead. Mix ingredients together with a whisk, adding a few drops of liquid if more is required. You want the glaze to be on the thick side. **The peach cobbler topping is so moist it will cause the glaze to soak in (disappear) in a matter of hours, so if you're not serving the cake right away you should wait to glaze it until just before serving.
