#vegan This is an adaptation of Paik Jong Won’s recipe. I made a couple tweaks to suit my tastes. This recipe is a perfect dish for those wanting to get into making Korean food as it has two very familiar ingredients - potatoes & meat (impossible, spam, ground, etc). Not to mention it is very easy to put together. Think of this as a faster slow cooker meal that happens to be more delicious in my opinion ;) The only specialty must-have ingredients are gochujang and doenjang, but they last for years in the fridge while also being common ingredients in many Korean dishes. INGREDIENTS 2 Potatoes 12 Oz Impossible Meat, Spam, or Ground Beef 1 cup green onion ½ onion 2 tbsp gochugaru 1 tbsp brown sugar 1 tbsp minced garlic 4 tbsp soy sauce 1 tbsp gochujang ½ tbsp doenjang Water to cover RECIPE 1. Cut potatoes into 1 inch chunks and place into pot. 2. Finely slice green onion and onion and place into pot. 3. Mash Impossible Meat or meat of choice into fine bits and place into pot. If not using Spam, add with pinch of salt. 4. Measure out dry ingredients and place into pot (gochugaru & brown sugar) 5. Measure out wet ingredients and place into pot (minced garlic & soy sauce) 6. Measure out pastes and place into pot (gochujang & doenjang) 7. Pour enough water into pot to lightly submerge ingredients. 8. Put on stove and set heat to high until it comes to a boil. 9. Mix all the ingredients, ensuring the pastes dissolve and reduce heat to medium. 10. Let stew for 30 minutes or until potatoes have become soft and almost all water has evaporated - stirring occasionally so the bottom doesn't burn. 11. Serve with rice and kimchi. 12.
