Ingredients needed: For Chiffon cake: • 90g (¾ cup) cake flour or all-purpose flour • 40g (3 tbsp) granulated sugar (for egg whites) • 20g (1 ½ tbsp) granulated sugar (for dry ingredients) • 3g (¾ tsp) baking powder • pinch of salt • 30ml vegetable oil • 3 large eggs, separated (room temperature) • 53ml milk (room temperature) • 3g (¾ tsp) vanilla extract or essence • 1g (¼ tsp) cream of tartar or 1 tsp fresh lemon juice Pineapple fillings: • 1 can of pineapple slices around 400g • Pineapple compote 200g (store bought or homemade) Frosting: 250ml chilled non dairy Whipping cream, (which I have used, you do not need sugar since it’s already sweetened) For dairy whipping cream (if using) 2 to 3 tbsp sugar Method: Chiffon cake: 1. Preheat oven to 160°C (325°F). line a 6-inch cake pan with parchment paper (do not grease the pan) 2. In a bowl, whisk egg yolks, oil, milk, and vanilla. 3. In another bowl, beat egg whites with cream of tartar or lemon juice until foamy. 4. Gradually add sugar, beating until stiff peaks form. 5. Gently fold the egg white mixture into the yolk batter in three parts 6. Sift in flour, baking powder, and salt, then mix until everything well combined. (Avoid over mixing) 7. Pour the mixture into the pan and bake at 160°C (325°F) for 30–35 minutes, or until a toothpick comes out clean. 8. Cool completely, you can use this sponge for layering as I did for making pineapple cake or serve as it is. Frosting: Pour the chilled non-dairy whipping cream into the large mixing bowl Begin beating on medium speed with a hand or electric beater.(If using a whisk by hand, use fast, circular motions.) Gradually increase and continue beating on high speed, until the cream is stiff, do not over mix. Transfer cream into a piping bag. If using dairy whipping cream the. Gradually add the sugar and whip well. Assemble the cake: Cut the cake into 2 or 3 layers. Brush each layer with pineapple juice from can or with simple sugar syrup. Add whipped cream to each layers and pineapple bits between layers. Cover the whole cake with whipped cream.
