It's a delicious and elegant way to add a touch of luxury to any dish. To make blood orange caviar you will need: 100 ml orange juice 1 gram agar-agar 1 teaspoon sugar Ice-cold oil Instructions: Place a glass of oil in the freezer for 2 hours before time. In a saucepan, add the blood orange juice and the agar-agar and stir until dissolved. Bring to a boil. Cook for another two minutes. Remove from the heat and let cool slightly. Fill a syringe with the blood orange mixture. Remove the oil from the freezer and pipe the orange juice mixture into the oil, making small circles. Let the orange caviar pearls sit in the oil for about 10 minutes, or until they are set. Remove the balsamic pearls from the oil and raise out the excess oil with cold water and enjoy!
