Ikejime: How to Harvest Striped Bass More Humanely with Better Quality of Fish Meat. In this video, I show you how to perform Ikejime on a striped bass that I caught. It is a more humane way to harvest the fish and it leads to better quality fish meat. The first step is to euthanize the fish with a spike or knife to the brain to kill it. The brain is located slightly behind and above the eyes. Then, you bleed the fish with two cuts to the organs behind the gills. The third step is to cut the tail off and use a wire to dislocate the spinal chord from the rest of the body. The fourth step is to let the fish bleed in a slurry of ice and water, until you are ready to fillet the fish. This method involves quickly euthanizing the fish and bleeding the meat in iced water. As a result, the fish meat is high quality. I even show you some dishes I prepared with this fish. I used to let the fish suffocate, but I read that the fish suffers a long time and the lactic acid can decrease the quality of the meat. Try this method. Thank you for watching!
