Masala on Wheels: Preserving Stories, Building Community Food is more than what we eat — it tells stories, preserves memories, and connects communities. Masala on Wheels is a pioneering research project from the University of North Texas that documents the powerful cultural impact of South Asian food trucks across the Dallas–Fort Worth region. Led by historian Dr. Arunima Datta and anthropologist Dr. Andrew Nelson, this initiative explores how food trucks serve as vibrant community hubs where culture, identity, and tradition thrive. From Nepali momos and Indian samosas to Pakistani kebabs, these spaces bring people together while preserving heritage through shared meals and storytelling. Through this project, UNT students gain hands-on experience in oral history, fieldwork, interviewing, and digital storytelling while helping create the first archive dedicated to South Asian food truck culture in North Texas. The project also aims to develop a community cookbook and host cook-and-learn events to help bring these rich food traditions into homes across the community.
