I found this Barmbrack recipe in an old cookbook so had to give it a go - very simple and made with tea - great for a lunchbox filler or afternoon tea. Full recipe written below. Irish Barmbrack Recipe : In a bowl, add 355ml of cold tea Add 200g of Brown Sugar 340g of Dried Fruit (I just used sultanas) Leave these to soak for a few hours or overnight, then add in: 285g of Self Raising Flour 1 Egg Mix thoroughly and put in a round cake tin, bake at 180oC for 1hr 45 mins, or until a skewer comes out clean (I took mine out 20 minutes early and it was well done!)
