plant-based pecan pie| oil-free |holiday desserts Crust 168 grams (1 ½ cups) almond flour 70 grams (1/2 cup) brown rice flour 60 grams (1/2 cup) tapioca flour ¼ teaspoon kosher salt 2 tablespoons dry sweetener of your choice (cane sugar, date sugar, etc) 6-7 tablespoons water Whisk the dry ingredients together. Add 4 tablespoons of water, mix, and add 1 more tablespoon. Mix again. When the dough holds together when squeezed it’s ready to roll out. Place the dough on a large piece of parchment paper and flatten it into a 6-inch disc. Roll it out until it’s a couple inches larger than the 9-inch pie plate. The dough should be thin but hold together. Use the parchment paper to flip the dough into the pie plate. Allow the dough to settle into the pie plate. Trim the edges with a knife and create a design on the edge, if desired, or just keep it plain. Using a fork, poke 6 vent holes in the bottom of the crust. Bake the crust in a 350° for 5 minutes. Filling I used Oliver Pecan Company pecans. They can be ordered here: https://www.oliverpecan.com/ 1 ¾ cups pecan halves 1 cup chopped pecans ¾ cup maple syrup ¼ cup coconut nectar ½ teaspoon cinnamon 1 teaspoon vanilla 3 tablespoons ground flaxseeds ¼ cup almond milk 2 tablespoons unsalted almond butter 1/8 teaspoon salt 2 tablespoon whole wheat flour In a food processor, add 1 cup of the pecan halves and process until it becomes like coarse meal. Place this in a large bowl along with the cup of chopped pecans. In a separate bowl, combine the maple syrup, coconut nectar, cinnamon, vanilla, flaxseeds, almond milk, almond butter and salt. Add the pecans to the syrup mixture and mix together well. Stir in the flour. Pour the batter into the crust. Using the remaining ¾ cup pecan halves, create a design on the top of the pie.
