Recipe: Poppy Seed Buns With caramelised orange 🍊 Ingredients: For the dough: Tangzhong (starter paste): • 120 ml water • 120 ml milk • 40 g plain flour (about 2 tbsp) Dough: • 130 ml warm milk • 10 g dry yeast • 100 g caster sugar (5 tbsp) • 1 egg • Tangzhong (from above) • 60 g soft unsalted butter • 1 tsp ground cardamom • 450 g plain flour (plus up to 80 g extra for kneading) • ½ tsp salt • Zest of 1 lemon _______ Poppy Seed & Caramelised Orange Filling A rich, fragrant filling where nutty poppy seeds meet bittersweet caramelised orange. Perfect for festive pastries or a special treat. Ingredients for the feeling: • 330 g poppy seeds • 1 large orange • 80 ml water • 500 ml milk • 60 g sugar (for the poppy seeds) • 60 g sugar (for the orange) Method: 1. Prepare the poppy seeds Rinse them well, cover with boiling water and leave for 15 minutes. Drain, then simmer gently in milk for 20–25 minutes. Leave to stand in the milk while you make the orange. 2. Caramelise the orange In a heavy-bottomed pan, combine the water and sugar. Once dissolved, add the orange sliced into rings (with peel). Simmer, covered, for 10–15 minutes. Drain the syrup into a separate bowl – it will be used later. 3. Combine the flavours Strain the poppy seeds through a muslin cloth. Add sugar and mix. Pass through a mincer, then add the caramelised orange slices and mince again. 4. Adjust the texture The filling should be moist but not too liquid. Add the reserved orange syrup gradually until you reach the right consistency. ✨ The filling is now ready – aromatic, glossy and full of flavour.
