You know the old saying, “When life gives you lemons, make lemonade?”🍋 Well, when life gives you unripe grapes, make verjuice.🍇 😉😜 Unless you are a wiley fox not interested in sour grapes, this is directions for making your own 😊😋 As you may have surmised by the name, verjuice (verjus) is a French creation. The name of verjus comes from the French words for green (vert) and juice (jus) which literally means green juice! and that’s pretty much what it is: the unfermented juice of green, unripe grapes that can add gentle acidity to savory and sweet dishes. 💛🍵 Traditionally it is made with the thinnings of a vineyard’s crop — the French thin their crop dramatically for reasons having to do with both the quality of the wine and because grapes can struggle to ripen in their comparatively cold climate. You can make verjus with any unripe grapes, even wild ones. You want to pick them the moment a few start to turn color.💚💛 My mom says in the olden days before the availability of store-bought verjuice there was a whole ritual where each family would purchase as much of sour grapes as was within their needs or means and then wash and crush the grapes and store the extracted verjuice in a cool dark place in a very specific type of glass bottle with a long narrow neck — that could then be used as flavor the whole of winter. Another method was to dry out the unripe grapes and then grind it into a powder form; or, they would pickle the unripe grapes (in verjuice, or in salty water); and, of course, now in modern times, it can be frozen for later use. 💚 🍇Verjuice Benefits🍇 unripe grapes are extremely beneficial for various health problems. Rheumatism and diabetes are among them. My mom tells me a story that when she was growing up, there was a doctor named “Hakim Abghureh” (literally: Doctor Sour Grape Juice! Ha ha!) named thus because whoever went to him with ailments would be prescribed ash ‘e abghureh (a version of Persian thick hearty soup made with plenty of verjuices) to clear and clean out the stomach and intestine as the good hakim believed that all diseases gather in the stomach and the intestines! 🍇So how do you make verjus? 🍇 You will need lots of grapes, a grinder or food mill, a fine-mesh strainer, a ladle, some glass jars, and some patience. But given the relatively small amount of juice that one can extract from an unripe grape, “It’s safe to say that anyone making verjus is doing it as a labor of love.” 💚 🍇How to use your verjus?🍇 It is an awesome salad dressing -- I've dressed a green salad with verjus many times and it is a great thing to use wherever you want a gentle acidity. “The cool thing about verjus is that, unlike vinegar, it plays well with wine,” As a chef, if you’re trying to pair dishes with wines, you can brighten up the flavor of a dish with verjus without destroying your diners’ palates. 🍇Does Verjuice Go off?🍇 It keeps well in the fridge for 2-3 months. The sediment at the bottom doesn't show that it has gone off, it is normal. Just shake it before using it. It might lose its taste if kept longer than this. 🍇How To Store Verjuice?🍇 You can keep verjuice in bottles in the fridge for 2-3 months. If you buy it from the store, you can keep it re-corked after opening. Also, you can freeze it in ice cube trays for about 6 months. 🍇Does Verjuice Contain Alcohol?🍇 No, it doesn't. It is pure grape juice but from unripe grapes. 🍇Can You Drink Verjuice?🍇 Yes, you can. But you might not like its tangy taste on its own. It would be just like drinking lemon juice.
