Zuppa Italiano recipe Prep time: 15 min. Cook time: 30 min. Ingredients: 1/2 lb bacon 1 lb Italian sausage (or Italian seasoned ground turkey) Olive oil to sauté 1 cup diced onion 1 cup diced celery 1 cup sliced carrot 1/2 lb sliced mushroom 4 cloves minced garlic 4-5 yellow potatoes cut in 1” pieces 4 cups chopped kale 8 cups chicken broth 2tsp salt 1tsp pepper 1/2 tsp crushed red pepper 1tsp oregano 1 lbay leaf grated Parmesan (optional) Crispy bacon (optional) 1.) In â large saute pan or cast iron saute sausage(or turkey meat) until browned. With slotted spoon remove from pan and set aside. In the same pan, saute bacon in the same manner and set aside. Reserve a little bacon for garnish. 2.) in the same pan saute mushroom, onion, celery and carrot until onions are translucent. Add salt and pepper and garlic. Saute for a minute or so. 3.) In â large soup pot combine the sautéed veggies,browned meat, bacon, broth, potatoes, kale, bay leaf and oregano. 4.) Simmer for 30 minutes or until potatoes are fork tender. 5.) When potatoes and veggies are tender add cream (or half and half) Bring up to serving temp but do not boil. Keep warm until serving time. 6.) Serve with crispy bacon bits, cheese and freshly ground pepper. Make it and spread some joy! Love, Vivian
