Hey guys!! Hope you are all having an amazing weekend. We made these amazing lemon bars and wanted to share them with you! You need to try them out! Lemony Lemon Bars: Crust: 2 sticks of butter, semi cold 1 cup granulated sugar 2 cups flour Pinch of salt Lemon Curd: 4 eggs 1 zest of lemon 1 cup fresh lemon juice 1 1/2 cup granulated sugar 6 tablespoons of flour Dusting of icing sugar parchment paper Preparation: Preheat oven to 350 degree F (180 Degrees C). In a bowl, add semi cold butter, sugar and beat with a hand mixer. Add the flour and continue to mix together. Lay a sheet of parchment paper in a baking dish and spread out the butter, sugar, and flour mixture. Press down make it compact. Bake for 18-20 minutes on the middle oven rack. While the crust is baking, prepare the curd. In a bowl, add the eggs, lemon zest and lemon juice and beat with a hand mixer. Add sugar and flour and mix until even and smooth. When the crust is ready and slightly golden, remove and add in the curd mixture. Bake for 18-20 minutes or when the curd has set. Remove from oven and let cool for about 30 minutes… if you can wait that long! Cut into squares or bars and dust with icing sugar. Serve anytime, warm, or completely chilled.. these are delicious!
