If you're looking to add a new salad to your lunch or dinner rotation, this one is light, yet filling and doesn't even require dressing. Niçoise salad is a classic French salad that has everything: protein, veggies and even potatoes! Finish with herbs, olive oil and lemon and you have a healthy, wholesome meal! Visit prairielandmarket.org/csa ** SPRING NIÇOISE SALAD Serves 2-4 1 head butter lettuce, torn 1 lb small new potatoes 2 eggs 1/2 lb asparagus, tough stems removed and cut into 3-in segments 1 c cherry tomatoes, halved 1/2 English cucumber, sliced 1 c green or black olives, drained 6 marinated artichoke hearts, drained 2 T capers, drained 1 can high-quality tuna, in olive oil Olive oil Lemon juice Salt & pepper to taste Chopped dill or tarragon, to garnish Bring a pot of water to a boil and add about 2 T kosher salt. Add potatoes and eggs and set a timer for 8 minutes. After timer ends, check potatoes for doneness. Remove eggs to ice bath. Smaller potatoes take about 12 minutes, larger potatoes about 18-20 minutes. About two minutes before potatoes are done, add asparagus to boiling water. When two minutes have passed, drain potatoes and asparagus and transfer to ice bath to cool slightly. Remove shells from eggs and cut into quarters. Cut larger potatoes into quarters, smaller potatoes in halves. Assemble salad between 2-4 bowls. Begin with torn lettuce, then cucumbers, tomatoes, eggs, olives, artichokes and capers. Divide tuna between salads and drizzle with olive oil from can, if desired. Finish with additional olive oil, squeeze of lemon, kosher salt and black pepper.
