This strawberry meringue has got the perfect flavor combination - tangy marinated strawberries paired with rich, unsweetened whipped cream, all sitting on top of a crispy outer meringue with a chewy inside. It's such a refreshing, tasty treat for summer! Ingredients: ~ 300g powdered sugar ~ 5 egg whites ~ 400g strawberries ~1/2 lemon ~ 300ml heavy cream ~ 3 tbsp balsamic vinegar ~ 2 tbsp sugar For the meringues: Preheat your oven to 250°F (120°C). Beat the egg whites until stiff peaks form. Gradually add in half of the powdered sugar, then beat for a few minutes, and finally the remaining powdered sugar, increasing the speed and beating for 10-15 more minutes. On a baking sheet lined with parchment paper, trace evenly sized circles - you can use a cup as a guide. Spoon the meringue mixture onto the parchment, filling the traced circles. Bake the meringues for 1 hour, then turn off the oven and leave them inside for another 15-20 minutes to continue drying out. For the marinated strawberries: Quarter the strawberries and place them in a bowl. Sprinkle with sugar, drizzle with the lemon juice and balsamic vinegar, and gently toss to coat. Let this mixture marinate while you prepare the whipped cream. For the whipped cream: Whip the heavy cream until stiff peaks form, being careful not to over-whip. Assembly: Gently crack the top of the meringues with a knife to break the crispy shell. Place the marinated strawberries in the center of each meringue and drizzle with the marinade syrup from the bowl. Top each one with a fresh whipped cream.
