Hello Foodies, I hope you are having a super fabulous day/week wherever you are in the world! Sending you big hugs and loveXX. I appreciate you & the support you are giving me & my channelXX Here's a flavour I love and hope you will too!!! I grew up watching my grandmother make jerk marinade and use it in so many delicious ways — on meat, fish, and just about anything she could think of. Back then, I didn’t understand the full depth of those flavours; I was too young to truly appreciate it. But as I got older and started using it in my own cooking, it was like a light bulb went off — this was the flavour I didn’t know I’d been missing. Now, I honestly can’t cook without it. It’s bold, fiery, and full of life — rooted deep in my DNA. That unmistakable smoky, spicy aroma always reminds me of summertime in Jamaica as a child. You can smell it drifting through the air and you just know — whatever is on that barbecue is going to be packed with flavour and absolutely mouth-watering. It hits all the right notes! This marinade brings those real Jamaican vibes straight into your kitchen. Just picture it: the heat of Scotch bonnet, the earthiness of pimento, fresh thyme, scallion, and a little touch of sweetness — all coming together in perfect harmony. It is super versatile too. And of course, it is perfect for chicken, pork, or fish — but don’t skip on jerk tofu or veggies either! It transforms anything it touches, delivering serious flavour and that unmistakable island energy. Honestly you will feel like you are right there in Jamaica, soaking up the sun, listening to music, and enjoying the beautiful vibes — all from your garden or kitchen.
