Preheat the oven to 180 °C/ 160 °C Fan/ Gas mark 4 and place the rack in the center of the oven. Lightly grease a 12 cup muffin tray with some melted butter and set it aside. 2. In a bowl place the eggs, caster sugar, flour, baking powder, baking spread and the vanilla essence (this is the all in one method) and whisk together until nice and smooth. This will take around 2-3 minutes. Try not to over mix. 3. Scrape the sides of the bowl. To test if your mixture is ready the batter should be falling off the spatula/spoon. 4. Dollop a spoonful of the cake batter into each cup ensuring that each cup has a similar amount of batter. 5. Place the muffin tray in a preheated oven for 14-17 minutes. Once a skewer inserted into the middle of the sponge comes out clean then it’s done. (Make sure to keep a close eye on the sponges as they cook quite quickly). 6. Once baked remove the tray from the oven and place onto a cooling rack for 10 minutes. After slightly cooled carefully remove the sponges and place back onto the cooling rack to cool completely. 7. While the sponges are cooling make the chantilly cream. In a bowl pour in the double cream and sift in your icing sugar, then place in your vanilla essence. Whip the cream until thick. This will take around 3-4 minutes. 8. Once the sponges have cooled completely cut them so that they are uniform in size using a cookie cutter (6cm in diameter). Then cut each mini sponge cake in half. 9. Place a spoonful of your favourite jam onto one half of the sponge and spread it out evenly. Then pipe on your chantilly cream. Alternatively you can place a spoonful of cream on top of the jam and spread it out (piping just looks neater). Place the 2nd half of the sponge on top. 10. Dust the mini cakes liberally with icing sugar. You can also place some fresh berries on top for an extra flourish. 11.
