Today’s Workshop: Learning how to prepare, bake and dehydrate fruits and vegetables for the holiday or any day. The reasoning behind both methods. The recommendation was based on helping you to find the best dehydrator for this type of project. DIRECTIONS: 1. Using a small kitchen scrub brush, wash the outer part of the fruits and vegetables to remove dirt and waxy texture. Set aside. 2. Pre-fill a large bowl with water deep enough to submerge the slices of fruit or vegetables, add 2 to 3 Tablespoons of lemon juice 3. Using a cutting board and a sharp knife, slice the fruit of your choice approx. 1/8 of an inch, trying to keep the slices whole so you can use them for packaging, garland and ornaments. Working with one type of fruit at a time. 4. Soak the fruit or vegetable in the lemon water, set the timer for 10 minutes, remove the fruit or vegetable setting them down to drain on a clean dish cloth. 5. Change the water in between each type of fruit or vegetable. You will notice pits and seeds and other imperfections removed from the fruits and vegetables. Empty the water and fill the bowl again with water and lemon juice to prepare for the next batch of items. 6. With another clean dish cloth, gently pat dry the fruits or vegetables that are sitting on drying cloth and begin to add them to the dehydrator or oven rack depending on the method of drying. 7. If planning to use the oven method, begin early in the day. Set your oven temperature to the lowest setting which could be 170 degrees. Prepare a large cookie sheet lined with parchment paper to catch any juices during the drying process. Lay a drying rack over the cookie sheet. Place fruits or vegetables on the drying rack. Fold a dishtowel, prop open the oven door and place the dishtowel inside the door just enough to allow heat and moisture to escape. Set the timer for 30 minutes. Turn the fruit over every 30 minutes for at least two hours to avoid burn marks on the fruit due to the metal of the cookie rack. Once the fruit begins to harden on the outer edges, you may turn the fruit with each hour anywhere from 4 to 18 hours depending on the type of fruit. Timing will need to be noted depending on the texture of the fruit or vegetable. Doneness will be determined by the outer texture and the inner cartilage. There should not be any juices remaining inside the fruit or vegetable. Some stickiness will be noticed. Remove the fruit or vegetable and set on a drying rack for 3 to 4 weeks before packaging to avoid mold. The fruit or vegetable may be displayed in open air as décor. 8. If using the dehydrating method, place the dehydrator in an open area for proper circulation. Place the fruits or vegetables on the shelves of the dehydrator shifting the racks as needed to fit all items. Set the timer on the dehydrator per manual instructions. Follow the oven process with turning the fruit every hour for two hours only. Set the timer again on the dehydrator for the recommended duration based on the manual instructions for the type of fruit or vegetable being dehydrated. There should be no need to turn the fruit or vegetables once drying appears and moisture is being removed. Follow the steps for doneness. Remove fruit or vegetables from dehydrator, and set on a drying rack for 3 to 4 weeks before packaging to avoid mold. The fruit or vegetable may be displayed in open air as décor. 9.
