Marinate & Cook the Chicken Mix all the marinade ingredients with chicken. Cover and refrigerate for at least 1 hour (overnight is best). Grill, bake, or pan-sear the chicken until charred on the outside and just cooked inside. (Don’t overcook, it’ll finish in the sauce.) Set aside. 2. Prepare the Masala Sauce Heat oil + butter in a heavy pan. Add onions and sauté until transluscent. Add tomatoes, garlic, ginger, cashews and spices Cook down until mushy. Cool and grind to a paste adjusting the consistency with 1/2 to 1 cup of water. 3. Make the chopped onion-tomato masala as shown. 4. Bring it Together Add the ground masala to the onion-tomato masala. Add cooked chicken tikka pieces to the sauce. Simmer for 5–7 minutes so flavors marry. Add fresh coriander. Adjust salt or spices as needed. Smoke the dish with charcoal for a pronounced smokey flavor (recommended) 4. Finish & Serve Garnish with chopped coriander and a swirl of cream. Serve hot with naan, roti, or jeera rice. 👉 This recipe gives you restaurant-style chicken tikka masala at home—smoky chicken, creamy-spiced sauce, and balanced flavors.
