Recipe Ingredients (for a 9x13-inch pan) 2 cups fine yellow cornmeal ½ cup all-purpose flour 1 cup brown sugar (or more to taste) 1 tsp salt 1 tsp ground nutmeg 1 tsp ground cinnamon 2 tsp mixed spice (optional) 1 tsp vanilla extract 1 tbsp grated fresh ginger (or 1 tsp ground) 4 cups coconut milk (fresh or canned) ½ cup raisins (optional) 2 tbsp melted butter or margarine For Soft Top Custard: 1 cup coconut milk 3 tbsp brown sugar 1 tsp flour ½ tsp nutmeg Method Preheat Oven – to 350°F (175°C). Grease and line a 9x13-inch baking dish. Mix Dry Ingredients – In a large bowl, combine cornmeal, flour, sugar, salt, nutmeg, cinnamon, and mixed spice. Heat Coconut Milk – In a saucepan, warm the 4 cups coconut milk with ginger and vanilla. (Do not boil). Combine – Slowly whisk the hot coconut milk into the dry mixture to make a smooth batter (no lumps). Stir in raisins and melted butter. Bake Base – Pour batter into prepared pan and bake for about 45 minutes. Prepare Custard Topping – Mix 1 cup coconut milk with flour, sugar, and nutmeg until smooth. Add Custard – After 45 minutes, gently pour custard mixture over the pudding. Return to oven. Finish Baking – Bake another 45 minutes to 1 hour, until firm but soft on top.
