What we did in Autumn and what we cook for comfort food in Autumn. 15 minutes Chicken Porridge Ingredients 2 garlic 2 bay leaf 200 gr chicken (cut into diced) 200 gr cooked rice 600 ml chicken stock or water (I'm using chicken stocks) salt and pepper to taste Condiments Fried Shallot Spring onion Krupuk/ Indonesian Cracker Sambal Kecap manis Methods Cut garlic into small pieces in a pot sauté garlic until light brown then add the diced chicken, then add bay leaf Add the stock Add cooked rice stir it to combine and close the lid for 5 minutes After 5 minutes keep staring the porridge, you don't want your porridge sticking in the bottom of the pot. If necessary add more water if the porridge is too thick. (I did not) Cinnamon Oatmeal Cookies Remake from Joy of Baking Recipe Ingredients 226 gram unsalted butter (room temperature) 205 gr light brown sugar 65 gr castor sugar 2 large eggs 1 tsp vanilla 195 gr all purpose flour 1 tsp baking soda 1 tsp salt 1 tsp cinnamon powder 260 gr old fashion oat 150 gr dark or golden raisin Methods Preheat oven to 180 celcius Beat the butter until smooth then add brown and castor sugar and beat until creamy and smooth (approximately 3 minutes) add 1 egg in a time mixed into the batter then add the 2nd egg along with vanilla In separate bowl, whisk flour, baking soda, baking powder, salt and cinnamon powder. Add the mixture into batter until incorporated. Stir in oatmeal and raisins take 30-40 gr cookies dough and rolls it. before you bake flatten the cookies slightly and bake for 14-16 minutes.
