I made some pancakes, grilled plantain, sweet soft corn and chicken wings for breakfast (me & my guy) ☺️ It was quick to put together obviously🙂. I marinate everything together for a few minutes before i get my pancake batter ready. Everyone here loves my pancakes, not to brag but I’m truly good at it🥰 sure you will want the recipe. It’s soft, fluffy, chewy, milky and so delicious!!! Ohhh i only grilled the wings, corn and plantain for a few minutes on a low heat to achieve a smooky flavor and some texture, later on transfered it to the oven to finish off while i get the glaze ready for chicken 😋 You need: Brown sugar, apple cider vinegar, ketchup, hot sauce, dark soy sauce, ginger garlic, chili flakes, yaji. Butter is optional. Pancake: 3/4 cup milk 2 tbs lemon juice (to the milk to form butter milk) 1 tbd oil 2 eggs 1/2 tsp milk flavor 1/4 cup white sugar 1tsp baking powder 1 + 1/3 cup flour Pinch of lemon zest The secret to making the perfect looking pancake is to use a nonstick pan and donot add oil for frying. Frying should be on medium heat not high. Ensure the pan is heated before going in with the pancake batter.
