Traditional Chinese Tea Ceremony popularized in the Tang dynasty has a long history and culture that ties to its spiritual and nourishing elements. Many credit Shen Nong as the first person to discover the effects of tea and spread the tea culture. There are many forms of Chinese tea ceremony. Here, I am practicing what my grandma has taught me and referred to it as Lao Ren Cha 老人茶 (old person's tea). It is now more commonly referred to as Gong Fu Tea. For me, there's always a certain calmness and enjoyment in brewing Lao Ren Cha. The process lets the tea brew to its fullness and allows the full potential of tea tasting 品茶. Different type of tea have different brewing process. Here, I am brewing Alishan tea, which is a type of Oolong tea, from Taiwan.
