Happy New Year!!! I hope you are all well and coping ok with everything going on. I had a bit of a break over Christmas but I'm now back to normal, and will be baking us through the lockdown (however long it goes on for...). This week's offering is a steak and Stilton pie from the book 'Pie' by Angela Boggiano. For this recipe you will need*: 2tbsp sunflower oil 1kg braising beef, cut into very large chunks 4 carrots, peeled and cut into large chunks 1 large onion, roughly chopped 1 clove garlic small pinch chilli flakes 4tbsp flour big splash balsamic vinegar 1 bottle full-bodied red wine 1 bouquet garni 150g Stilton cheese, crumbled 500g plain flour 250g unsalted butter, cubed 1 egg, beated plus extra to glaze 70-100ml water salt and pepper *I used half quantities in my final pie, but made all the stew and froze for a later date/another pie.
