Cut off the stem end of the jalapeño and slice a lengthwise “lid” along the side of the pepper. 2. Remove the seeds and inner membranes using a spoon (this makes it easier and less spicy). 3. In a bowl, mix cream cheese and shredded cheddar until well combined. 4. Stuff the jalapeño generously with the cheese mixture. 5. Place the cut piece back on top like a lid. 6. Wrap the entire pepper with bacon. I first tried securing the bacon with toothpicks, but it made flipping difficult while frying. So I removed them and cooked without toothpicks, turning carefully to crisp all sides evenly. 7. Fry in a pan over medium heat until the bacon becomes crispy and golden brown on all sides.
