We look forward to our potato harvest every year and we were not disappointed with this season's yield. With some love and care from Mother Nature and of course our favorite amendment compost, we dig up 200 pounds of beautiful spuds grown from the 15 pounds of seed potato we planted in May. Without the root cellar this winter we will have to store our potatoes indoors. The dry and warm conditions of the cabin are far from ideal to keep potatoes fresh which means even more canning in our near future.
