Tannin can be described is a naturally occurring chemical compound, known as polyphenols, found in many plants. In grapes, these compounds are found in the skin, seeds, and stems. When it comes to aging wines, wood barrels can impart tannins. Foods and beverages such as tea, dark chocolate, nuts, and coffee also contain tannins. • Tannins are naturally occurring phenolic compounds in many plants, including grape’s skins, stems, and seeds. • Tannins help provide balance, texture, and structure to the wine. • Both red and white grapes have tannins, but the intensity and characteristics vary. • Wines with high levels of tannins can age for years to even decades. A quick experiment you can easily do at home to further drive this point home. Boil water and make tea. Brew 1 cup for 1 minute. Brew the 2nd cup for 4 minutes. Brew the 3rd cup for 10 minutes. Sip each of them one at a time with a sip of water between each cup to cleanse the palate. With this experiment related to wine, you will find out what has light tannin to medium tannin to heavy tannin. The longer the brew the stronger the tannin.
