Pepperpot is a traditional family dish from my dad’s side of the family from Guyana. We have this every year for the holidays on Christmas and New Years. Pepperpot can be made in various ways, but we grew up with my mom making it with beef. As more of us in the family are vegan or vegetarian, we started making a vegan version with Gardein beefless tips. This year, I recorded my mom preparing the dish for us and recorded the recipe! INGREDIENTS Main: 2 bags Gardein homestyle beefless tips Base of stew: 8 cups water 2 cinnamon sticks 1/2 cup cassareep 2 tbsp dried thyme 1 tbsp red crushed pepper flakes 3 dashes ground nutmeg 1 tbsp whole cloves 1 tbsp white or brown sugar 1 tsp salt 1/2 white onion, sliced 1/2 garlic bulb, chopped 3 dashes garlic powder 2 dashes dried basil Note: You can also use another vegan meat alternative. And if you don’t have access to this, don’t worry this stew can be great (better actually, and healthier) if you just use a variety of vegetables such as potato, cassava, carrots, mushrooms, etc) Note: If substituting a fresh ingredient for dried, or a whole spice for ground, use less (for example, if using garlic powder instead of fresh garlic clove or if using ground cloves instead of whole cloves, use around half of the amount). If substituting a dried ingredient for fresh, use more (for example, if using fresh thyme instead of dried, use around twice as much) INSTRUCTIONS: Add water and vegan “beef” alternative to a large pot and turn the stove on medium. Add the rest of the ingredients. Stir and cover pot. Once boiling, reduce the heat to low and simmer for 2 hours. Let the sauce reduce. Stir occasionally. Taste and adjust seasonings to your liking! Enjoy! We usually eat this with a soft bread. We dip the bread in the sauce (let it soak up a bit), then pick up the “beef” in the bread and eat. Let me know what you think in the comments below!
