Here's how you can make it: #Ingredients: **For the Fish: 500g Rui (Rohu) fish, cut into pieces 1/2 tsp turmeric powder 1/2 tsp red chili powder Salt to taste 2-3 tbsp mustard oil for frying *For the Kasundi Gravy:* 2 tbsp mustard seeds (yellow and black mixed) 2-3 green chilies (adjust to taste) 1 tbsp kasundi (store-bought or homemade) 1 small onion, finely chopped 1 tomato, finely chopped 1/2 tsp turmeric powder 1/2 tsp red chili powder 1/2 tsp sugar (optional) Salt to taste 2-3 tbsp mustard oil 1/2 cup water Fresh coriander leaves for garnish Instructions: 1. *Marinate the Fish:* Clean the Rui fish pieces and marinate them with turmeric, red chili powder, and salt. Set aside for 15-20 minutes. 2. *Prepare the Mustard Paste:* Soak the mustard seeds in water for 10-15 minutes. Drain and grind them with green chilies and a little water to make a smooth paste. 3. *Fry the Fish:* Heat mustard oil in a pan until it starts to smoke. Reduce the heat and fry the marinated fish pieces until they are golden brown on both sides. Remove and set aside. 4. *Make the Kasundi Gravy:* In the same pan, add more mustard oil if needed. Add the chopped onions and sauté until they turn golden brown. Add the chopped tomato and cook until it softens. Add the turmeric powder, red chili powder, and salt. Cook for another 2-3 minutes. Stir in the mustard paste and cook until the raw smell goes away. Add kasundi and mix well. Add water to adjust the consistency of the gravy.
