Chinchulines (also known as tripa mishky) are not only delicious, they might also prevent any stomach problems that you might get while adjusting to the diet in Ecuador. The intestines are grilled and then put in a peanut-infused broth with some grains and potatoes. We also try menudo, a mix of offal with a vegetarian sausage in a broth with potatoes and grains.
