Serves 8-10 people Ingredients • 1 cup oil • 2 cups all-purpose flour • 3 tspn baking powder • 1/4 tspn baking soda • 1 1/2 cups sugar • 4 eggs, at room temperature • 1 tablespoon vanilla extract • 1/2 cup whole milk(you may add 1/4 cup if your batter is liquidy) you can use warm water instead of milk as well. • a tablespoon white vinegar Directions Preheat the oven to 350 degrees F. Oil one 8-inch-round cake pan or two 6 inch round pans(make sure to fill pan 2/3 only) and dust the pan with flour, tapping out the excess. Sift and whisk flour, the baking powder & soda in a bowl until combined. Beat eggs until fluffy and pale then add vanilla essence, in a large bowl with a mixer on medium-high speed. Then add sugar and beat well , in the end add oil and mix very well. Beat in the flour mixture in 2 batches, adding the milk in between, beginning and ending with flour, until just smooth. Then add vinegar in the end and mix again until combined. Pour the batter in prepared pan. Bake until the cakes are golden on top and a toothpick inserted into the middle comes out clean, 30 to 35 minutes(more or less depending upon your oven) Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the racks to cool completely. Trim the tops of the cakes with a long serrated knife to make them level, if desired. Enjoy with tea or your favourite frosting.
