Video Transcript: My passion for the Neopolitan technique grew from when I started making pizzas. If you look more in depth into the why that pizza is made or the tradition behind it, it's so different to many other pizza techniques. The cooking of it, the oven temperature, and the manipulation of the dough is so different to any other tradition. If I could classify a single ingredient as the dough, that would be my favorite ingredient. It's a product that's so simple but still complex to make, and it's the glue of many great dishes that are being produced. To make the world's best Margherita pizza, you need passion, love, and obviously, keeping it to the tradition of the style that you're making. So the overall experience, and this may sound cliché, but it's for everybody. You can find little spots in the restaurant if you want a little romantic dinner, or it's great for families because we've got some good working spaces, and then it's also great for business people that want to have their business lunch or dinner. It's all about the food and the whole atmosphere for us.
