Line a muffin tin with cupcake liners. Medium bowl, whisk flour, baking powder, baking soda, salt, ginger, cinnamon. Large bowl, use a mixer to cream the butter and brown sugar until light and fluffy. Beat in molasses, egg, and milk. Gradually mix the dry ingredients into the wet ingredients. Do not overmix. Fill 2/3 full. Bake for 18–20 minutes. Toothpick test. Cool in the pan for 5 minutes, then transfer to rack. White Chocolate Ganache 8 oz white chocolate (chopped or white chocolate chips) ½ cup heavy cream Small saucepan, heat cream over medium until simmer – DON’T BOIL Chopped white chocolate in a heatproof bowl. Pour cream over. Let sit for 2–3 minutes, then Stir Gently. Cool & Whip. Simple White Chocolate Frosting Recipe Ingredients ½ cup (1 stick) unsalted butter, softened 4 oz white chocolate, melted and slightly cooled 2 cups powdered sugar 1 tsp vanilla extract 2–3 tbsp milk or heavy cream (maybe) Melt white chocolate in a microwave-safe bowl in 20-second blasts, stirring between until smooth. Let it cool slightly. In a mixing bowl, beat the softened butter until creamy. Gradually mix the melted chocolate into the butter until smooth. Add powdered sugar, one cup at a time. If needed, Add milk or cream, 1 tablespoon at a time, for consistency. Mix in vanilla.
