Video Recipe Demonstration Fresh Mulberry Pie Made using the Thermochef, Ingredients for Mulberry Pie Filling 200 grams raw sugar Sprinkle of cinnamon about 1/2 teaspoon or to taste 1 teaspoon pure vanilla extract 4 tablespoons of cornflour 1.5 kilograms of fresh, washed mulberries a little milk for brushing the crust 30 grams of water to mix cornflour to a wet paste. One quantity of Shortcrust Pastry. Method. Place sugar in the themochef bowl and chop on speed 5 for about 10 seconds until until finely ground, add mulberries, cinnamon and vanilla. set temperature to 70 degrees on speed 1 for 15 minutes. Mix 2 tablespoons of cornflour with a little water to combine and add to mulberry mixture. Set Temperature to 100 degrees, speed 1 for 4 minutes. Test for consistency , depending on how juicy your fruit is you may need to add more cornflour mixed with water , if so, add 1 tablespoon of cornflour at a time mixed with a little water and cook for a further 2 minutes on speed 1 at 100 degrees. Once you are satisfied with the consistency pour your mulberry mixture into a prepared shortcrust pie shell. Dont forget your mixture with thicken slightly upon standing and cooling. Brush the edges of the pie with a little milk and place the pastry pie top over the mulberries. Make sure you press and crimp the edges down well, to ensure a good seal. Pierce the top of the pie crust to ensure steam can escape and the pie filling doesn't overflow from the edges. Brush the entire top crust with more milk and sprinkle with sugar. Bake your Mulberry Pie in a fan forced oven at 190 degrees celsius for about 30 minutes until your pie is golden brown and crusty topped. Allow your pie to cool slightly before serving. It is best served warm or at room temperature, either on its own or with custard, cream, icecream or natural yoghurt. This recipe is an excellent way to use fresh mulberries, which are in season at the moment. You could of course substitute this quantity of Mullberries for other fresh seasonal berries. I suggest you wear gloves and apron when preparing your fruit as mulberry juice is particularly good at staining fingers and clothes. This recipe was prepared using a Thermochef Kitchen Appliance. You could make the filling on a stove top, however, this Mulberry Pie is easily made using the Thermochef and delivers an excellent result, without having to stand and stir and potentially puree the fruit too much. The Thermochef weighs, stirs, cooks, times and prepares a delicious result every time. I hope you enjoyed this mulberry pie recipe and give it a try.
