In 2005 he opened the Hand & Flowers in Marlow and within 10 months earned a Michelin star. Tom's menu changes frequently as he regularly takes advantage of the best seasonal produce. Signature dishes include potted Dorset crab, squab pigeon and foie gras en croûte. He has won Great British Menu for the last two years with his main courses and scored perfect ten from chef judge Jason Atherton for his take on a traditional hog roast.
