I cannot tell you what pumpkin variety this is but it had a lovely smooth texture, very sweet so I imagine would be equally delicious in sweet deserts too. It has kept outside on the veranda since harvesting with no signs of damage so it's a fairly good keeper. Just as well, I have no room indoors to keep them! As to the recipe, I didn't really measure anything. I used a very big onion, 2/3rds teaspoon chilli flakes and the whole pumpkin (obviously peeled and seeds removed), chopped and added when onions were cooked. I added in all 'around about' a good tablespoon of coriander spice, a teaspoon of cumin, some garlic and onion granules, a whole small garlic bulb (from the garden). Oh, I also added a couple of carrots to the onions and chilli. I added about a cup of water, a whole litre of soy milk and 3 of the crumbly stock cubes, some nutritional yeast about a teaspoon of miso paste and 1/2 teaspoon mixed spice. For the tofu crumble: 1 small block, garlic and onion granules, soy sauce, about a tablespoon of olive oil and I think that was it. I cooked it in the oven for about 25 minutes on about 180 degrees C. Really, you can change up, add or remove whatever you like. This is just to demonstrate using what I grow in the garden. I hope it helps or gives you ideas. It's nice to see what you grow in the garden being used too.
