BIHAR FOOD SERIES • Episode 31 : Baked Littis and roasted Brinjal-Tomato chutney ➡️ For Litti dough :- 1. In a bowl add wheat flour, Salt, Ajwain Mangrela, Ghee 2. Gradually add water and knead into dough 3. Cover and rest for 15 min ➡️ For Baingan-Tamatar chutney :- 1. Cut Brinjal in half 2. Make slits on brinjal slices 3. Stuff Garlic cloves in these cut 4. Similarly slit tomatoes 5. Place these on a baking tray 6. Rub Mustard oil on brinjal and tomato 7. Preheat Oven for 10 min 8. Roast the brinjal on 180° for 30 min 9. Once done, peel off the skin from tomatoes and Brinjal 10. Add chopped Onion, green Chilli, Salt, Mustard oil, coriander leaves 11. Mix well ➡️ For Litti stuffing :- 1. In a bowl add sattu, Onion, Ginger, Garlic, green Chilli, coriander leaves 2. Add Ajwain Mangrela, Mustard oil, achaar masala, lemon juice 3. Mix well ➡️ For Litti :- 1. Take small dough portions 2. Press the edges and form a cavity 3. Place the stuffing in the centre 4. Seal the edges, pinch off excess dough, and press it to give a flat shape 5. Place littis on a baking tray 6. Bake them on 180° for 10 min 7. Flip and bake on the other side for another 10 min 8. Heat some ghee in a pan 9. Place the littis and roast on each side until golden in colour 10.
