Recipe: Crispy Chicken Schnitzel Yields: 4 servings Prep time: 20 minutes Cook time: 15-20 minutes Ingredients: 4 boneless, skinless chicken breasts 1 cup plain flour 2 large eggs 1/4 cup milk 2 cups Panko breadcrumbs Salt and freshly ground black pepper to taste Vegetable oil or canola oil for frying Lemon wedges for serving Salad for serving (optional) Instructions: Butterfly each chicken breast by slicing horizontally almost all the way through, then opening it like a book.
