🌿Sweet Woodruff Custard💚 featuring @intothenature.suisse Did you know Sweet Woodruff (Galium odoratum) tastes just like VANILLA when dehydrated?! I found that out last year when I was on a plant walk and dinner with our friends Nadia & Robert from @intothenature.suisse 💛 They made a delicious sweet woodruff panna cotta for dessert. These two lovely souls put on absolutely fabulous plant walks!! 🌿 If you live in the Geneva, Vaud, or Grisons regions of Switzerland, sign up for one of their outings! You will be amazed at everything you will learn about the wild plants in our region. This week, I met up with Nadia who shared with us her DELICIOUS sweet woodruff custard. Ingredients: 15 sweet woodruff tops, dehydrated* 500mL almond milk 30g cornstarch 50g powdered sugar Pinch of turmeric Steps: dehydrate the sweet woodruff Place the almond milk + plants in a pan. Bring to a boil then let infuse 2 hours. Strain. Add the cornstarch to the cooled milk. Whip. Add the sugar and turmeric. Whip. Heat while whipping for 6-8 mins until the custard thickens. Transfer to small glass jars or into tartlets. Enjoy 😉 *Always be 100% certain of your plant ID! This short video does not cover all the safe foraging practices.
