Pecan Pantry Pecans: https://thepecanpantry.com use code Karen5 for a 5% discount on your order Vinegar Coleslaw 1 large head of cabbage, shredded 1 medium onion, sliced thin 1 cup granulated sugar 3/4 cup white distilled vinegar 1/3 cup oil 2 tsp celery seed 1 tsp salt 1 tsp yellow mustard Toss cabbage and onion together in a large bowl and set aside. In a saucepan, combine sugar, vinegar, oil, celery seed, salt, and mustard. Bring to a simmer and cook 3 minutes or so or until sugar is completely dissolved. Pour over cabbage and onions. Toss well. Enjoy! Blackeye Peas: 1 lb dried blackeye peas smoked ham hock, butter, bacon, fat back salt to taste water or chicken stock to cover Rinse and look peas for bad ones or rocks. Add to a large pot. Season with salt to taste, fat of your choice, and cover with liquid. Cook on a medium to heat for around 1 1/2 hours stirring often and adding liquid as needed so the pot does not get dry and peas scorch. Serve with cornbread and enjoy! Pork Roast Preheat oven to 425 degrees. Season pork roast with desired pork rub. Place in a dutch oven or roasting pan. Add about 1 - 2 inches of water or stock in the bottom of the pan. Cover and cook around 1 to 1 1/2 hours or until internal temperature reaches 145 degrees. Collard Greens Rinse your bunch of greens or use the prewashed bagged like I do. Add a tablespoon of oil to the bottom of a large pot. Slice a small to medium sized onion and sautee, adding greens in batches and stirring as they wilt down. Toss in a smoked ham hock, fat back, or bacon, your choice. Salt to taste. Add about a tablespoon of apple cider vinegar if desired. Cook about an hour or until greens are tender. Serve with cornbread and enjoy. Easy Banana Pudding 2 boxes of cook and serve vanilla pudding milk per both package directions 2 -3 bananas 1 box vanilla wafers vanilla extract or paste 4 - 5 eggs white and yolk separated * 3 - 4 Tablespoons of powdered sugar Add vanilla wafers to a large casserole dish. Cut bananas and toss in lemon juice to avoid them darkening. Spread over the wafers set aside. Add pudding mix and milk to saucepan. Separate eggs adding yolks to the pudding mixture and whites in a large bowl. Stir eggs yolks into the pudding mixture mixing well and cook on medium to low heat until thickened stirring constantly. Pour over vanilla wafers and bananas. Beat egg whites until foamy. Sprinkle in powdered sugar. Beat on high until stiff peaks form. Spread over pudding mixture. Place in a 350 degree oven and bake until meringue starts to brown. Enjoy! if you are not a fan of meringue, substitute whipped topping
