RECIPE BELOW 👇 Of all the things Doc Hayden could have asked for, I didn’t expect this. I’m not one to back down from a challenge though, so here’s my take on Beef Mami! Recipe below!! 1 kg beef shank w marrow 1 bunch leeks, tied together with butchers twine 1 onion, halved 1 liter beef or chicken stock 1 star anise 15 peppercorns 1 tsp Salt Put all ingredients together in a pressure/slow cooker and cook either for 4-6 hours on slow cook or 2 hours on high pressure. Remove the leeks/twine, onion, star anise and the peppercorns and discard along with bones. Break meat apart for serving. Noodles 4 1/2 cups All-purpose Flour 1/2 cup water 2 eggs 2 tbsp Jolly HeartMate Canola Oil 1 tsp Salt Toppings Fried Garlic Fried Shallots Chopped Spring Onions Chopped Cilantro Mix all ingredients together (except 1/2 cup of flour for dusting noodles) manually or in a stand mixer for 5-7 min on lowest setting until the dough all sticks together into a smooth consistent ball. Cut in half then dust with flour to keep it from sticking to the pasta maker. Start with 0 thinning setting and run through pasta maker once or twice for each setting until you reach 4 or desired thinness. Next, run it through the cutting setting you prefer. I used the angel hair settings. Bring a pot of water to a boil with some salt and a splash of oil to keep the noodles from sticking together. Let noodles boil for 30 seconds then remove with a strainer and separate serving bowls. Divide the meat among bowls and ladle in the soup. Top with chopped spring onions, fried shallots and just a little dash of fried garlic, not browned so it does not become bitter. Lastly, top w chopped cilantro.
