Salad of finely chopped tomatoes, onion, cucumber and bell pepper has long ago become a visiting card of Israel and is a regular accompaniment for most of dishes of Israel cuisine. Such a salad is served even for a breakfast. A special way of cutting and dressing make it unique. Ingredients: • tomatoes – 3 • long cucumber – 1 • red bell pepper – 1 • yellow bell pepper – 1 • small red onion – 1 • lemon – 1 • olive oil – 3 tbsp • parsley- 5 g • cilantro – 5 g • mint – 3 g • salt – to taste • ground black pepper – to taste You will need: • carving board • deep bowl • grater Preparation: 1. Dice all the veggies finely in equal sizes, chop up the greens. 2. Lay the chopped veggies into a deep bowl. 3. Add the zest of 1 lemon to the salad. 4. Squeeze ½ of the lemon, add the olive oil, salt and pepper to taste, toss neatly and serve right away the Israel fresh vegetable salad to the table. Advices: 1. As a rule long cucumber is used for such a salad, but if you have regular ones it is preferable to peel and deseed them. 2. Choose tomatoes with smaller amount of seeds for this recipe. 3. Take bell pepper of any color you have. 4. It is important to use fresh squeezed lemon juice, not bottled. 5. Use fresh greens only, dried ones are not applicable for this recipe. 6. For better result try to dice vegetables equally. 7. To your taste use other greens, for example dill or basil. 8. Israel salad can be used as a base for your own author’s salad. Protein: add diced boiled or grilled chicken or steak – you’ll have a perfect evening meal. Cheese: add chopped feta or goat’s cheese and you’ll have a tasty breakfast. This salad is perfect with chopped olives. Spices: add ½ of chopped up jalapeno for hot version. Or add red chili flakes into a dressing.
