Snow Cheesecake | Maria Paz Cheesecake Ingredients: Egg Yolks -4 ( At room temperature) Sugar-1/4 cup (50g) Oil-1/4 cup (60ml) Milk -1/4 cup (60ml) Vanilla - 1/2 teaspoon Cake flour -1 cup (125g) Salt-1/4 teaspoon Egg whites-4 Lemon juice-1/2 teaspoon Sugar-1/4 cup (50g) Cheddar cheese for topping. Method: In a bowl whisk egg yolks and sugar untill pale yellow. Add milk, oil and vanilla and mix . Add flour and salt and mix until combined. In another bowl whisk egg whites and lemon juice, Add the 1/4 cup sugar in 3-4 batches and whisk untill stiff peaks forms. Now add a small portion of the egg whites to yolk mix, mix together, add this mix to remaining egg whites , Mix in a cut and fold method. DO not over mix. Transfer the batter in to a oiled baking tin with parchment paper on bottom. Tap to remove any air bubble or use tooth pick or knife. -Bake in a preheated oven at 170 C for 40-45 minutes. Once done let the cake cool completely. Cut into desired shapes to stack . Frosting: Unsalted butter -110g Sugar-3 tablespoon Condensed Milk-1/4 cup Whipping cream-1/2 cup Cream cheese-50g Vanilla -1/2 teaspoon Method: Prepare frosting by mixing softened butter and sugar using whisk or electric beater. Add cold whipping cream, cream cheese , condensed milk and vanilla.
