Amla Rice is a healthy, tangy, and flavorful dish packed with vitamin C and antioxidants. It’s perfect for a nutritious lunch, boosting immunity and digestion. Ingredients for Amla Rice: Cooked rice – 1 glass Amla (Gooseberry) – 3, grated Black pepper – ½ tsp Sesame seeds – 2 tsp Peanuts – ¼ cup Oil – 2 tsp Mustard seeds – 1 tsp Urad dal – 1 tsp Chana dal – 1 tsp Curry leaves – few Green chilli – 1, slit Hing – a pinch Turmeric powder – ½ tsp Sambar powder / Rasam powder – 1 tsp Jaggery powder – 1 tsp Salt – 1 tsp (adjust as needed) Grated coconut – ¾ cup Coriander leaves – ½ cup, chopped Ingredients for Coconut Chutney: Grated coconut – ¾ cup Roasted Bengal gram – ¼ cup Green chillies – 2 Garlic cloves – 3–4 Ginger – ½ inch Curry leaves – few Tamarind – small piece Salt – 1 tsp (adjust as needed) Method: Dry roast peppercorns and sesame seeds and grind them to a coarse powder, and dry roast peanuts & keep aside. Heat oil in a kadai, add mustard seeds, urad dal, and chana dal, once they splutter, add curry leaves, green chilli, and hing, and fry well. Now add grated Amla and fry for 1 minute. Then add turmeric, sambar powder, the prepared pepper–sesame powder, salt, and jaggery, and fry again. Mix in cooked rice, grated coconut, coriander leaves, and roasted peanuts, combining gently. For the chutney, grind coconut, roasted Bengal gram, green chillies, garlic, ginger, curry lea es, tamarind, and salt with a little water to make a smooth paste, or adjust the water to make it thick if you prefer.
