Awarded Michelin stars for nine consecutive years! The ultimate in soba making and craftsmanship!

When talking about soba in Ryogoku, the name "Edo Soba Hosokawa" always comes up. This famous restaurant, a regular in the Michelin Guide, attracts many gourmets with the exquisite dishes created by the owner, Takashi Hosokawa. From soba to tempura and even sake, Hosokawa's commitment to only serve what he considers to be "really delicious" shines through. The soba served is characterized by its firm texture. The rich aroma of soba spreads with every bite. The owner himself carefully selects whole buckwheat from all over the country, including Ibaraki, Hokkaido, and Shikoku, and stores it carefully at low temperatures, peeling only the amount needed the day before. In addition, the next morning, it is milled in a stone mill and freshly ground, made, and boiled 100% buckwheat soba is served. Hosokawa's specialty is that it serves two types of soba from different regions. If you order a refill, you can enjoy soba from a different region from the first bowl, which is a nice touch that soba connoisseurs will love. The restaurant is located in an alley a little way off Hokusai-dori, and its calm and tasteful exterior catches the eye. Once you pass through the noren curtain, you will find a sophisticated space where Japanese style and modern design blend together.
