Pralines 1 cup sugar 1 cup packed light brown sugar Pinch of salt 5 ounce can evaporated milk 1/2 stick butter, room temperature 2 teaspoons vanilla 1 1/2 cups pecans, coarsely chopped Put a long piece of parchment paper out on your countertop before you begin making the candy.  In a large, heavy bottomed saucepan, stir together the sugar, light brown sugar, salt, and evaporated milk. Bring to a boil over medium heat. Boil for exactly 4 minutes, stirring often. (Start timing the four minutes when the mixture is at rolling boil.) After four minutes, remove from the heat and immediately stir in the butter, vanilla, and pecans. Using a heavy spoon, quickly stir the mixture for 50 to 100 strokes, just until the mixture begins to slightly thicken. Quickly spoon out your pralines onto your parchment paper.
